xcm-docs : fix broken/outdated links #6312

I came across a few links in xcm-docs section(https://wiki.polkadot.network/docs/learn/xcm) which points to the outdated github xcm repos

for example https://wiki.polkadot.network/docs/learn/xcm/journey-locks#example-1
points to https://github.com/paritytech/xcm-docs/tree/main/examples

I can find something here https://github.com/paritytech/polkadot-sdk/tree/master/polkadot/xcm/docs/src
but it seems work in progress. What do you suggest to do @CrackTheCode016 ?
