[Feature] Add documentation on accessibility testing and AT support #781

Description

Adds detailed information on the accessibility test performed on the library, and other useful information.

Motivation and Context

Currently we state that the library has "Accessibility WCAG 2.1 level AA", but do not explain how this is tested or what known issues there might be. This added documentation aims to fix that.

Release notes

Documentation on accessibility support, and how the accessibility of components was tested.
