It would be nice if this tool allow for easy applying patches to source.
For example additional file 'patch.diff' empty on beggining where users can add
diff output from what they want to get against original source.

Not a defect, this is a feature/enhancement request. I've considered adding a
patch process but this is well down the road if it ever happens at all.
Keeping this open for now.

Would be nice, but the code is nicely-organized enough that you can easily add
a one-liner sandwiched between extracting and building, worked like a charm for
me.

I recommend waiting on this until git is included. Speaking of that I didn't
get the script comment about NO_FINK and NO_DARWIN_PORTS vars needing to be set
to avoid using Fink or MacPorts. I don't think this is true, but I was
previously compiling Wine from git without having Fink or MacPorts on my system.

I customized the osxwinebuilder script a while back and posted it under the
issue with building under os x 10.8 to build from git repositories. I can now
apply patches to wine using the normal git methods.

I forgot you'd be interested. Feel free to give a look and modify to meet your
needs.
