Abandon git-delta #4

In codespaces my install of git delta is currently done via rust / cargo and takes a long time. This is because there are issues with git-delta on Debian dandavison/delta#26 so that it can't currently be installed via apt.

I also have issues with it's richer syntax highlighting and how it plays with switching MacOS colour theme #3

Maybe it would just be easier to switch form git-delta to https://github.com/so-fancy/diff-so-fancy

I removed git-delta in e53788a and am closing this now ... if I need a better diff again in the future I can always add it then
