This is a bit confusing because google searches often pull up an older version of this list, org-export-latex-classes, which has the same syntax. Many are probably still using older versions of org.

Thanks for this. To be honest, I don't remember now how I got it all configured, although I don't recall using those particular command line tools.
Eventually I'll take a stab at what you've suggested on a fresh computer and update the README based on what works. In the meantime, having this open Issue with your suggestions is hopefully helpful to people.
Instructions for deploying the shillcv.cls file and for enabling the LATEX_CLASS options.
For deploying shillcv.cls, add to the latex class library. For example, to set up a class location in $HOME with texlive:
sudo tlmgr conf texmf TEXMFHOME $HOME/<location_of_home_texlive_setup>
mktexslr $HOME/<location_of_home_texlive_setup>
