docker-compose files need additional "platform" specifications to run on apple silicon chips. Need a way to robustly have the docker compose work on all systems.

I edited this issue to remove the "bug" label, as it is not a bug in Blast but rather a change cause by Apple that requires additional work to accommodate specific machines that might be used by some developers.
