Descriptive summary

In Hyrax 2.1, a universal viewer with IIIF support was added. Do we want to add the Rails based RIIIF server to Hyku and thus the viewer?

Rationale

I don't have strong opinion, other than I think that Hyku should be as full featured as it can be off the shelf. I'm sure the community has more to say about this though. If this the the wrong place for such discussion, my apologies... I'm happy to move it somewhere else.

Strip redundant code from Hyku so that we're using the full Hyrax impelementation.
