Native build fails with that exception.
Caused by: java.lang.NoClassDefFoundError: com/fasterxml/jackson/databind/JsonSerializer

Native build image generated.

If you use Jackson, you need to add the quarkus-jackson extension. AFAICS, it's missing from your pom.

I just tried it and indeed I see the problem, however the easy fix is just to use:

    <dependency>
      <groupId>io.quarkus</groupId>
      <artifactId>quarkus-resteasy-jackson</artifactId>
    </dependency>

instead of

    <dependency>
      <groupId>io.quarkus</groupId>
      <artifactId>quarkus-resteasy</artifactId>
    </dependency>

Or you can just add

    <dependency>
      <groupId>io.quarkus</groupId>
      <artifactId>quarkus-jackson</artifactId>
    </dependency>
