It looks like a good starting point, but it would be helpful if you provide a minimal setup. Currently the kubernetes manifest includes a lot of containers i might, or might not need, which makes it confusing.
Maybe a manifest that includes just a simple config map, a deployment for the collector and a service for access for other pods in the cluster.

Edit: after re-reading your question, I am wondering if the page you are looking at is not the one you need. Do you want to run the OpenTelemetry Demo or the OTel collector in k8s for your own applications?
