Remove deprecated name mapping in hec otel fields in exporter

When starting the collector with the HEC exporter, this warning shows:

2022-09-08T23:18:10.920Z warn [email protected]/exporter.go:77 otel_to_hec_fields.name setting is deprecated and will be removed soon. {"kind": "exporter", "data_type": "logs", "name": "splunk_hec/logs"}

Remove all use of the name attribute from logs as it is deprecated. Remove the mapping from HEC exporter and receiver code, and remove from docs.
