Hello - I just setup nzyme to give it a try in Ubuntu 20.0.4 with an Alfa AWUS051NH...the web UI says it's not running and to check logs, so I've done that and here's what I'm seeing:

so...could this be because I'm using an original AWUS051NH (ralink chipset), and NOT the v2 with MediaTek chipset?

It reports that the device is simply not up. Run ifconfig wlx00c0ca325141 up.

The documentation has an example tat shows how to automatically bring the interfaces up using Netplan on Ubuntu: https://www.nzyme.org/documentation/installation-on-ubuntu-server (Step 3: Configure your WiFi adapters)
