I am connecting to the Moodle API via an oauth server to server application. The licence is identified by the user's email. This works perfectly. The problem is that there are several people accessing the same user for their classes and I have them organised using an Excel spreadsheet as the plugin does not warn when two events coincide. Is there any way in the zoom configuration or something in the plugin configuration to avoid overlapping events?

If I understand your request correctly, you would like an option in the Zoom module to prevent or warn when a new Zoom meeting overlaps with an existing Zoom meeting on the same account. This would prevent the host from being double booked.
