Have more text editor options

Multiple of us run into the issue of missing emacs or a simple (and non-vim) editor available. Would be really nice to provide emacs (even if it's just emacs -nw).

Currently there is vim and nano. Any other editors in addition to emacs?

emacs and vim should cover most users.

I do also wonder what the best ways are to keep the relevant part of the docs in sync with the image. (e.g. https://github.com/nasa-fornax/fornax-documentation/?tab=readme-ov-file#is-it-possible-to-do-code-development-in-emacs-or-vi-or-some-other-ide)
