Review/remove labs

The labs in the Labs folder are out of date and not maintained. Unfortunately they are still linked to on the following pages:

https://azure.microsoft.com/en-us/education/

These labs need to be reviewed to find the appropriate replacements on Microsoft Learn, and the linking sites updated to the relevant Learn content.
