Remove abandoned dependencies (laminas-config, laminas-loader, etc.)

Summary

Several dependencies of this component (at very least, laminas-config and laminas-loader) have been recently abandoned. We should remove dependencies on these components if we plan to continue maintaining this component (and I hope we will, as I still find it very useful).

If you need my help to implement any of these changes, I am willing to assist as time permits; just let me know the best way to coordinate the work.

Feel free to reach out on the #contributors channel on Slack or just send in your PRs - I'm not aware of anyone actively working on this lib so any patches you send are unlikely to conflict with other people's work 👍
