- Cream together butter and sugar in a mixer.
- Separate the egg, placing the egg white in a separate small bowl.
- Add the egg yolk to the butter and sugar mixture and combine.
- Incorporate vanilla into the mixture and combine.
- Add flour and salt to the mixture, mixing until a cohesive dough forms.
- Stir the egg white until frothy.
- Use a 0.32 oz scoop or teaspoon to form dough into balls. Dip each ball into the frothy egg white and coat with sesame seeds.
- Place the coated cookies on a baking sheet lined with parchment paper, leaving about 1 inch of space between each.
- Make a deep indentation in the center of each cookie using either your thumb or a spoon.
- Fill each indentation with tart cherry preserve.
- Bake in a preheated oven at 375°F for 13 minutes or until the edges turn toasty brown.
