I wrote some documentation, there are two files missing which are required to be updated, then you can choose Spanish in the right sidebar: https://github.com/kevinpapst/kimai2/blob/master/var/docs/translations.md
After you changed them, you have to clear your cache with bin/console cache:clear.
