Documentation for own input-/outputfolder for each user

Hello,

i searched unsusuccessfully yet for documentation on how to configure own in- and outputfolder for each user.

My goal is a structure like this:

• scanner/
  • mama/
    • in/
    • out/
  • papa/
    • in/
    • out/

and so on.
Where the out folder is mounted to the corrosponding folder on our nas so that the documents will be placed on the nas. The in folders are samba shares so that the scanner can place the documents there.
Paperless-ng is installed on a pi (bullseye).

Where can i find documentation on configure paperless-ng this way?
