Just a few small suggestions around grammar/punctuation/etc that I've spotted as I have been going through.
1 Introduction to DES Concepts
Including “:” before entering lists for “Discrete event simulation allows you to” and “better flow, which can in turn lead to” and “you can change all sorts of things”
Capitals on first word in list for "you can change all sorts of things" list
Likewise for these both throughout the book - although I think this is very minor so would put it at the very bottom of a to-do list (and could totally just do without : and capitals)

No bullets for “To model the DES generators (arrival points) To model the individual journey of each entity”
15 Modelling Variable Arrival Rates
15.1 Sentence unclear - "The documentation of the in sim tools says”"
17 Tracking Resource Utilisation
17.2 bullets not formatted - "We create a new interval_audit_utilisation() function that we pass - a list of resources we want to monitor - a time interval at which to snapshot the utilisation in the process"
