[FEATURE REQUEST] OpenSearch improvement - update Filebeat to 7.12.1 compatible version

Currently, we are cheating with Opensearch compatibility by adding this statement

compatibility.override_main_response_version: true

to the opensearch.yml config file.

Update Filebeat to the latest compatible version (Filebeat OSS 7.12.1)
