AppCenter doesn't have an option to build with XCode 10 (yet) so we should ensure that's an option before we switch over on our local builds

Wait a month or two and hope React Native sorts itself out.

Yep, RN 58+ would be a prerequisite for this.

RN58 is scheduled to go live in "a few days". Once it does we can try upgrading.

As we mentioned on our Tuesday call, we'll also need to figure out how to bump the XCode version in AppCenter builds.
