The OpenTelemetry Collector component documentation is out of date

While trialing Elastic and using the EDOT I found the documentation here: https://github.com/elastic/opentelemetry/blob/main/docs/collector-components.md

It appears to not be an exhaustive list of the components available, this gave me the wrong impression of what was possible with the EDOT and I thought I would have to build my own collector to get other components like the prometheus receiver. I had to go here to find a list of plugins that were included in the project: https://github.com/elastic/elastic-agent/blob/main/go.mod

Thanks for sharing this feedback @flux-ricky. We will work on clarifying that building a custom collector is just an option
