Elasticsearch field types will soon be represented by EuiToken:

We should explore leveraging this work in the mappings editor.

I did a quick audit on this. There is not yet support for all field types used in the mappings editor.

Available:

tokenNumber
tokenBoolean
tokenDate
tokenGeo
tokenIP
tokenShape
tokenNested
tokenAlias
tokenRange
tokenObject

Field types that do not have a dedicated icon yet:

Support for the above mentioned field types were added via elastic/eui#3165.
