[Maps] Support all metrics from visualize region and coordinate maps

The maps app should support all metrics that can be configured in the region and coordinate maps.

These should be available in:

• joins in a vector layer
• es-grid-sources

Effort to convert aggregation editor to EUI has completed, #30922.

#48961 adds unique count support for Elastic Maps.

The only other missing metrics are top hits and pipeline aggregations.

Support for top hits is provided by the documents source.

I do not see a lot of use for pipeline aggregations. Pipelines are used for calculating derivatives. I do not see why/how someone would want to show derivatives on a map for a tile grid aggregation or a terms join. Pipeline aggregations make more sense for x/y charts.
