Create documentation for how our infrastructure setup is

All the way from Azure infrastructure to how we've done things in Kubernetes.
This should be a living documentation inside the operations repository. Holding details like how the ingress controller works and the thinking behind it, to higher levels as well - feeding into the documentation of our platform in general.

We might want to consider having a certain level of transparency on this documentation - it is the services we provide and people find comfort in knowing how we've done it all.
