New pipelines are way more flexible than current Haystack pipeline. Therefore, we should migrate and adapt the old REST API code to support them.

The code will stay in the dedicated folder for now: consider moving it into a separate package in the future.

For v2 Pipelines, we should have a cleaner and better file-upload endpoint, avoiding issue like this: #3790
