fix: deserialize signed builder bid with proofs

The SignedBuilderBid object now contains optional InclusionProofs and implements the serde traits manually.

Note: when saving the bid in the auctioneer, we still save the BuilderBid and IncusionProofs separately with two different functions. I left this as is in order to minimize changes here but it would be more ideal if it was done in the same function.
