We currently use @mozilla/readability for Reader Mode on iOS, unlike Desktop/Android where we use Speedreader. We should also use Speedreader mode on iOS.

I'll add to this that before we can do this we need to refactor the body_sniffer and speedreader components in brave-core so that they can be used in iOS. They currently rely on //third_party/blink/* and //content/* which are illegal imports for iOS.
