With the new `FormatFunc` we need to bump major version since it's a breaking change.
This will also hopefully explain the change in `FormatFunc` to return an
`interface{}` and in general how to use `WithFormatter`.
The field is not the default formatter, it's the actual formatter set by the user. The default formatter is used when this is empty and that is to just JSON marshal the type.
