uuid is an official schema datatype https://git.drupalcode.org/project/drupal/blob/10.3.x/core/config/schema/core.data_types.schema.yml#L111-116

Supposedly setting the type can build in some validation, though I bet drush config:set would bypass that validation.

Test using the config_inspector module included with quickstart.
