Right now, Mountpoint doesn't support writes at all, so you won't be able to use it for backups. In the future, Mountpoint will support sequential writes (#27), and so you'd be able to copy files into Mountpoint to upload them to your S3 bucket. But it won't be a full-featured backup solution, and likely won't natively support backups written by these applications, as they might want to do random writes.
Some of the applications on your list already support native backups to S3. For others, AWS Backup might be what you're looking for if you're using these applications on AWS.
