Hi, the instructions lack a detailed summary of the equipment required before getting started. A list that targets a first-timer would be great. I am trying this out the for the first time myself, so any advice from those with more experience is welcome.
I made a starter list:
Equipment required before you start
Gloves: Disposable food-safe gloves to protect your hands while handling chilis.
Wide-mouth clean jar: A glass jar with a wide mouth for fermenting the chili sauce. A capacity of around 1 liter or more is recommended.
Pickle weights: Glass or ceramic weights used to keep the vegetables submerged in the brine during fermentation.
Kitchen mixer/blender: An electric blender or mixer to blend the fermented vegetables into a smooth sauce.
Bottles: Glass bottles with airtight lids or caps for storing the finished chili sauce. Bottles with a capacity of around 5 to 8 ounces are commonly used for hot sauce.
Funnel: A small funnel to help transfer the chili sauce into bottles without spills.
Strainer: A mesh strainer or sieve to separate the fermented vegetables from the brine.
pH strips (optional): pH test strips to measure the acidity of the fermented sauce.
Spoon: A regular kitchen spoon to pack the jar and remove air pockets during the preparation process.
