Display matrix field content in email notification template

Has anyone got a code example for displaying Matrix data in a notification email template? We have a client who has an application form on their website which uses three matrix fields. When they receive the notification emails, the value that's displayed is the ID of the matrix row, rather than the matrix content itself.
