core/coin: bring the cosmos-sdk coin implementation inside

Curently in core/coin we're going back and forth from the sdk types to our types.

This is inefficient and confusing, we unfortunately can not make use of cosmos-sdk coin API because it's based off gogoproto (protov1), so the API needs to be brought here and adapted.
