Fix pinned dependencies

There will be a lot of dependencies pinned across this repository and rainbow-token-connector due to the dependency of a particular commit of near-sdk-rs (near/near-sdk-rs#325) that haven't been released yet.

#525 and Near-One/rainbow-token-connector#39 introduces it. This is a tracking issue to fix this, in case both PR are merged before the new near-sdk-rs release.
