Add a proper logging system to the CLI (handle verbosity levels)

We need to handle verbosity levels properly, at the moment the verbosity flags are not being used.

We can take a look at the winston library for logging.

I think our existing logging system is fine. We can construct our own levels, I think I suggested how to do this already.
