As of now (2.16) we still have the pin on postgres image in:

charts/charts/kong/values.yaml

Lines 598 to 600 in 1c5242f

    
           # use postgres < 14 until is https://github.com/Kong/kong/issues/8533 resolved and released 
        
           # enterprise (kong-gateway) supports postgres 14 
        
           tag: 13.6.0-debian-10-r52

Given that Kong/kong#8533 is resolved, we should be able to remove that pinned tag.

I've done a very quick local test and it worked fine.
