Currently, this list looks like this:

addmedia

I'd like to suggest changing the text beneath "Image" entry to read "Images other than TIFFs and JP2s (use "File" for those)."

For the "File" entry, change it to "Files that do not fit into other types listed here. Also use for TIFFs and JP2s."

For "Document", change it to "PDF and other document files."

I like this suggestion (and I think I could actually volunteer to do the work!), but would be be clashing with anything on the Drupal side by changing these? Are some of them the Drupal defaults?

Those entries are defined by Islandora Defaults in islandora_defaults/config/install/media.type.file.yml, islandora_defaults/config/install/media.type.document.yml, and islandora_defaults/config/install/media.type.image.yml. Once you change those files, you'll need to refesh the config by running drush cim --partial --source=modules/contrib/islandora_defaults/config/install/ (I think that should do it).

You could also edit the description in the Media Type's edit form and then re-export islandora_defaults if you want less yml wrangling.

Islandora Defaults fixes this after all of our in-depth discussion, but the Sandbox and the Install Profile don't. The sandbox looks like this as of today:
