Add crowd intelligence for all mobs.
Currently, all mobs behave almost regardless of their surroundings. Give them the ability to make use of their environment and mediums for more immersive and engaging game play.
Examples:
Make skeletons surround their target instead of just aiming and shooting, might as well make them keep distance with the target and escape when close. Making them harder to kill, more interesting to fight, and prevent them from shooting each other... you can also make them look for nearest shadows to shoot from when target is too far and sun is out.
Allow wolves to attack more than one enemy at a time. Make them form packs for attacking each nearby enemy, and organize each pack in a circular manner. Allowing them to attack all enemies at once instead of standing in a queue.. and preventing some of them from getting stuck at the end of the pack. You can also make injured ones stand nearby until the rest are done or until its help is needed.
Give spiders the ability to make traps for the player. When they spot the player in caves for example, they stay above his head or high in walls until they have gathered enough members to attack. Give them roles as well, some poison the player and run away until the effect is gone and do it again, some do simple male attack, some try to attach the player into blocks with webs...
Make pillagers cooperate with each other. Maybe make the Pillagers shoot arrows faster if its alone for knock back and having time to run when close to target, make Vindicator distract the target and allow Pillager to shoot stronger arrows.
Make mob herds escape in one direction, and when one of the herd gets harmed they all escape. (idea taken from a mod, but i forgot its name)
Introduce more relations between mobs. like in wolves and sheep, foxes and chicken...
