In 1.17, the graphics of a lot of mobs are broken. For example, sheep glow and glow squids are all messed up. Also, looking up when in water makes the terrain outside of water messed up. Spiders have white eyes, not red. It is the same glitches that occur when launching 1.16.220 with -fes.

Graphics fallback for macOS, do it better.
Looks fine on Linux always -fes 1.

Also glfw+wayland (linux) similar problems, but better performance.

Here is a screenshot of my problems. I do not know how to fix them. I also have a screenshot of the About this Mac page.

Graphics are normal on Ubuntu via QEMU.

A temporary fix is simply setting your desktop picture to solid black and play in fullscreen. You also have to hide all open apps.

A much better fix is setting your system appearance to dark mode. This could be made better by adding a note in the Launcher saying that graphics are messed up in macOS Light Mode, but normal in macOS Dark Mode. Another workaround would be to make the game window use dark mode no matter what.
