chore: Remove debug in favor of a logging framework

Evaluate pino and winston. Consider integration with opentelemetry (see instrumentation packages), support for log sending and trace correlation, and module filtering.

Note that we may not want to remove debug for client-side packages like aztec.js.

Also, make sure whatever we choose does not break aztecjs on the browser.
