Publish release packages

What is currently missing?

Currently the project is not publishing releases artifacts and users have to either build the project themselves (assuming main is in a working state) or use the images from the demo.

How could this be improved?

It would be good to have zip/jars artifacts so it's easier for users to bring the plugin in their environment.

Is this a feature you would work on yourself?

We were kind of unsure about taking this step and making the first official release because we expected possible breaking changes in the config, etc. However, after Kafka 3.8 we should draw the line.
But anyway, nothing should stop us from publishing snapshot releases every now and then.
